Spiced Pork

Spiced Pork with Apples and Onions

Ingredients

Bolded items are eligible for purchase using Fresh Funds
    • 1 lb pork tenderloin, patted dry with a paper towel
    • 3 tablespoons olive oil, divided
    • 2 teaspoons paprika (smoked if available)
    • 1/2 teaspoon cumin
    • 1/2 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 (10 ounce) bag frozen cut green beans
    • 2 medium apples, cored and diced
    • 1 medium sweet onion, sliced
    • 2 teaspoons fresh rosemary
    • Salt & pepper to taste

Instructions

  1. Preheat oven to 400 degrees and line a sheet pain with foil
  2. Rub the pork with 1 tablespoon of olive oil and the paprika, cumin, garlic powder, onion powder, and salt & pepper to taste
  3. Place pork in the center of the sheet pan
  4. Toss the green beans with 1 tablespoon of olive oil, and salt & pepper to taste
  5. Spread green beans evenly around the pork
  6. Place pan in the oven for 20-25 minutes or until pork reaches a temperature of 145 degrees in the center
  7. While the pork cooks, heat 1 tablespoon of olive oil in a pan over medium heat
  8. Add the apples, onions, and rosemary then cook for 10-12 minutes or until soft
  9. Serve the tenderloin topped with apples and onions and the green beans on the side
